Green tikka massala chicken with scented rice – tomato and cucumber raita

Ingredients:

Instructions (steps of cooking):

1st step
Slice the chicken breast, to make the marination we have to blend the oil, fresh ginger, garlic, mint leaf, basil, coriander, chili together, add salt and pepper to taste. We put the chicken in the marinate mixture and let it for a while.

2nd step
In a small pot we put a little bit of oil, high heat, seared the rice until getting little bit of color then add a 1,75 times hot water, turn down the heat, add a cinnamon, cloves, green cardamon and cook for 10-12 minutes.

3rd step
For a raita, combine the yoghurt with a squeezed lime juice, garam masala, salt, pepper and the small dice cucumber, tomatoes, finely chopped coriander, mix them well and refrigerate until we plating.

4th step
We fried the chicken in a hot pan, cook both side for a couple of minutes served with the scented rice and the raita.
