Thai cuisine: Khao Pad – Scallop – pineapple mango relish recipe

1st step
As a first step, we are going to cook the jasmine rice. In a large pot, we put water, seasoning with salt, wait until it’s boiling, and we add the rice. On low heat, cook it for about 10-12 minutes. Keep it on the side when it’s ready until the plating.

2nd step
The next move is to make our relish. We have to peel the pineapple and the mango and cut them into small dices. Add chopped garlic, shallot, chili, bell peppers, chives, coriander, seasoning with fresh lime juice, fish sauce, sesame oil, salt, and pepper.

3rd step
For the fried rice, we are cutting brunoise style carrot, celery, onion, garlic, chili, green beans, and ginger. We put peanut oil in the heated pan, heat it, and sauteƩ all the ingredients, seasoning with a fish sauce, oyster, and soya sauce. After a few minutes, we add the cooked rice into the pan, gently mix it, and in the end, we add the eggs too, mix it well, and keep it on the side.

4th step
On the really hot pan, we have to sear the scallops on both sides for 60 seconds, seasoning with salt and pepper. In the end, we can put a cold butter cube to get more taste.

5th step
When ready, we can start plating. Enjoy!
