Slovakia is a small but interesting country in the middle of Europe. Its capital is Bratislava, an old baroque style city situated on both sides of the Danube. Because Bratislava is one of the smallest capitals of Europe, you can explore the entire city within a couple of days. The city trip will give you unforgettable moments. It does not count that you are alone or with company. However not just the capital but the country side is worth to visit as well. An amazing part of the Carpathian Mountains run along in North-Slovakia which provide perfect hiking possibilities during spring and summertime or in the autumn, not to mention the cold-weather sports in the winter. In addition, all over the country many restaurants offer the visitors to try the traditional Slovakian kitchen in 365 days of the year.

Bryndza sheep cheese dumplings:
If you got tired after an eventful day or you just want to eat something stodge, don’t hesitate to taste Bryndza sheep cheese dumplings, or how Slovakian people say “bryndzové halušky”. Did you know that according to some experts Bryndza cheese helps to prevent cancer because of the huge amount of microorganism, different kinds of hormone and enzyme? Beside the health benefit of this cheese, Bryndza sheep cheese dumplings is a real traditional Slovakian cuisine. It is very easy to make.

Ingredients:

  • 500g/18oz flour
  • 700g/24oz potato
  • 1 egg
  • salt to taste
  • 140g/5oz mashed sheep cheese (Bryndza is the best) smashed with sour cream
  • 500g/18oz diced bacon
  • onion and parsley (optional)

Instructions (steps of cooking):

1st step
Boil water in a pot and add some salt.

2nd step
Finely grate the potato into a bowl. Add the flour, egg and salt to taste. Mix all of these till the dough is smooth.

3rd step
Cut off small chunks from the dough with a spoon and place them into the boiling water. If the chunks floated tot he top, get them out and stir with the sheep cheese and sour cream smashed mix.

4th step
Fry the diced bacon and place the cubes on the top with the rendered bacon fat. Onion and parsley are perfect complementary ingredients or decoration.
